Balvenie Single Cask 15 Years [Speyside]

Tasting: January 12th 2006

Color: Light brown to Orange

Nose: Before water: Orange peel, hint of smoke, violet. After water: Vanilla, floral, honeysuckle

Palate: Before water: Overpowering mint. After water: Honey, hint of tobacco, vanilla, cherry

Body: light and fast (non viscous)

Finish: Short with tones of apple and mint.

Bottling date: 08/12/04. Cask number 9626. In Cask date: 01/08/89. Bottle number : 110. Alc/Vol: 57.8%

Macallan Cask Strength USA version [Speyside]

Tasting: January 11 2006

Color: Amber, copper

Nose: safran, toffee, salt, oil,tobacco

Palate: leather, cream, clove, plum

Body: ehtylic silk

Finish: raisin and plum. short to medium

Macallan uses small still pots and use slow distillation to extract the aromas. This cask strength is not as complex as other whiskeys, could it be the still pots ?

Talisker 18 Years [Isle of Skye]

Tasting: January 15th 2006

Color: gold to light brown

Nose: before water: smoke, peat, malt, cinamon. After a little water: grains and sea. A Trip!

Palate: before water: orange, vanilla, honey, clove. After: lemon peel, a hint of sesame

Body: Pure Silk! At 45.8% Not a single bite of astringence, DO NOT DILUTE!

Finish:licorice, salt

Do not dilute, it lost its silkiness. This dram will make you feel the sea breeze

Glenmorangie 12 Years [Highlands]

January 19th 2006

Color: Amber/Light Brown

Nose: Orange, Caramel, coffee, plum, pepper

Palate: Vanilla, honey, cinamon, Clove, Tobacco (pleasant)

Body: Lots of character, viscous and full-bodied

Finish:floral, hint of violet and rose. Medium to long

43% Sherry Wood finish. A very pleasant and complex drink, it is not peaty nor smokey so it leaves a lot of space for subtle floral and spicey notes to emerge slowly. The finish is very pleasant and evolves towards more straightforward floral tones.
